Mutton Cutlet
This recipe calls for mutton, but chicken, beef and fish work
just as well. Mutton cutlets can be made a day ahead and frozen. Place the
cutlets in microwave make them crispy and serve hot as you need them.

To cook the mutton
To make the masala
- Onion - 2 (chopped)
- Garam masala powder - 1/4 tsp
- Black pepper powder - 1/4 tsp
- Red chilly powder-1/2tsp
- Ginger garlic paste - 1/2 tsp
- Green chilly - 2 nos (chopped)
- Salt –as required
- Curry leaves - 1 string
- Coriander leaves – few(chopped)
- Potato – 1 medium size
For the batter and frying
- Bread crumbs - 1 cup
- Egg - 2
- Vegetable oil -for frying
Method
STEP 1
Clean and cook the
mutton with pepper powder, 1/4 tsp of turmeric powder, water and enough amount
of salt. Mince the mutton and Keep it aside.
STEP 2
Cook potato and
mash it and keep it aside.
STEP 3
Heat one table
spoon of oil in a pan, add onion and some salt. Saute onion till it becomes
soft.
STEP 4
Add ginger garlic
paste, green chillies, black pepper powder, 1/2 tsp of red chilly powder,
coriander leaves and curry leaves. Saute for some more time.
Then add garam
masala powder.
STEP 6
Add the minced
meat and cook for 5 minutes.
STEP 7
Then add mashed
potato, salt and mix well. Saute it, till it becomes dry. Allow the mixture to
cool.
STEP 8
Make small balls
with the mixture and roll into desired shapes.
STEP 9
Beat one egg with
some salt and keep it aside. Sprinkle bread crumbs in a plate.
STEP 10
Dip each cutlet in
beaten egg and roll with bread crumbs.
STEP 11
Heat oil in a pan
and deep fry it.
STEP 12
Tasty mutton
cutlet is ready. Serve hot mutton cutlet with tomato sauce/mint chutney.
