MINI EGG MUFFINS

Mini Egg Muffins



These delicious 'muffins' make a perfect breakfast treat, and the whole family will love them. Great for popping in lunchboxes too!
These delicious muffins are a perfect healthy start to your day. They are light and fluffy and really good for you.









Ingredients

  • Chopped onion- as required
  • Chopped tomato- as required
  • Chopped capsicum- as required
  • Salt- as required
  • Cheese(shredded mozerella) –as required
  • Egg -2(beaten with pepper powder and salt)

Method

STEP-1
Preheat oven into 200 degrees.

STEP-2
 Grease mini muffin tin.

STEP-3
 Add vegetables of your choice along with cheese and salt; pour beaten egg mixture on it.




STEP-4
 Place muffin pan on the center rack of a preheated oven and bake for 20-25 minutes or until muffins are light brown, puffy, and the eggs are set.

STEP-5
 Let muffins cool for a few minutes before removing from the muffin pan or cups.
Loosen gently with knife if they seem to be sticking.
Eat immediately or let it cool completely.
TIP

You can add chicken or other meats, spinach, spring onion, and lots more as per your taste.
