EGG KABAB

Egg Kabab


Ingredients
  • Boiled Eggs-2(cut into four pieces)
  • Onion-3(Finely Chopped)
  • Boiled Potato-1(Big)
  • Ginger Paste-1 Teaspoon
  • Garlic Paste-1 Tablespoon
  • Green Chilly -1 Finely Chopped
  • Turmeric Powder-1/4 Teaspoon
  • Red Chilly Powder-1 Teaspoon (Up To Your Spice Level)
  • Coriander Powder-1 Tablespoon
  • Fennel Seed Powder-1/2 Teaspoon
  • Garam Masala-1 Teaspoon
  • Chopped Coriander-Few
  • Chopped Curry Leaves-Few
  • Lime Juice-1 Teaspoon
  • Oil-1-2 tablespoon
  • Salt- As Needed

For Coating and Frying
  • Egg-1(Beaten)
  • Bread Crumbs-1 Cup
  • Oil-For Frying

Method

STEP-1
Add 1-2 tablespoon of oil in a pan and fry finely chopped onion till it turn transparent.

STEP-2
Add chopped green chilly, ginger paste and garlic paste and saute again.

STEP-3
Then add turmeric powder, red chilly powder, coriander powder, fennel seed powder, ½ teaspoon of garam masala and salt. Mix well and saute in low flame.

STEP-4
Mash the boiled potato and mix with the onion mixture.

STEP-5
Finally add chopped coriander leaves, chopped curry leaves, 1/2 teaspoon of garam masla and lime juice.
Mix well and let it cool.

STEP-6
Cut the boiled egg into four pieces.

STEP-7
Take small part of potato mixture and flatten with fingers.

STEP-8
Place one piece of egg at the center and roll it.

STEP-9
Dip each roll in beaten egg and then coat with bread crumbs.

STEP-10
Heat oil in a pan at medium flame and deep fry each roll till it turns golden brown.

EGG-BANANA STIR FRY

Egg - Banana Stir Fry

Ingredients
  • Large Ripe Bananas / Nendrapazham-2
  • Eggs-2
  • Sugar-2 Tablespoon
  • Cardamom Powder- A Pinch
  • Cashew Nuts And Raisins-Few
  • Ghee-2 Tablespoon

Method

STEP-1
In a bowl, mix together eggs, sugar and cardamom powder and keep it aside.

STEP-2
Peel and chop bananas into small pieces.


STEP-3
Heat ghee in a pan and fry the cashew nuts and raisins.

STEP-4
Add chopped bananas and fry till it turns soft and golden in colour on medium flame.

STEP-5
Then add egg mixture to this and scramble it well along with bananas and cook for 3-4 minutes.
Switch off the flame and serve.

SWEET BANANA ROLL UPS

Sweet Banana Roll Ups

Ingredients
For Banana Roll
  • Ripe Banana-2 (Sliced Lengthwise)
  • Ghee-2 Teaspoon
  • Tooth Pick

For Filling
  • Shredded Coconut-4-5 Tablespoon
  • Nuts and Raisins –Few
  • Sugar-1 Tablespoon
  • Ghee-1 Tablespoon


Method

For filling

STEP-1
Heat ghee in a pan and fry cashew nuts and raisins.



STEP-2
Then add shredded coconut and sugar.
Saute for 2-3 minutes. Remove from flame and allow it to cool.

For Banana Roll

STEP-3
Melt ghee in a heavy based frying pan.

STEP-4
Place the bananas in the pan.

STEP-5
Cook for 3-4 minutes, turning occasionally.

STEP-6
Place a spoon of filling in the bananas, and roll it with hands.
Secure with a toothpick.

KAIPOLA

Kaipola




Kaipola is a tea time snack with main ingredient as banana. This is an authentic Malabar dish which is often served as an evening snack. This is a snack which can be made easily. This is a sweet dish and it is a mixture of ripe bananas and eggs.Kaipola is usually prepared during Ramadan days.

Ingredients

  • . Ripe banana (Nendrapazham) - 3 chopped
  • . Eggs - 4 nos
  • .  Ghee - 5 tsp
  • .     Sugar – 4-5tbsp
  • .  Cashew nuts - 10 nos
  • .  Raisins - 10 nos
  • .Cardamom –powder-1tsp

Method

STEP-1
.Peel out the skin of banana and cut into small square pieces.

STEP-2
. Heat a pan add 4 tsp ghee and add the chopped banana to it and sauté for 5 minutes.
. After 5 minutes when banana turns light brown colour, turn off fire and set aside.

STEP-3
.In same pan fry cashew nuts and raisins separately. And kept aside.

STEP-4
. Take a bowl beat 4 eggs and add cardamom powder and sugar. Whisk well.

STEP-5
.Add fried banana into this egg mixture. Mix well.

STEP-6
.Heat 1tsp of ghee any deep bottom non stick pan with lid at low flame (or in pressure cooker)
.Pour the banana mixture into it.
.Then add fried nuts and raisins into it.
.Close the lid of pan (or close the lid without pressure cooker weight).
.Cook in low flame for 15-20 minutes (or cook in low flame until steams comes out through the nozzle)

STEP-7
.Insert toothpick at the center and ensure it comes out clean.
.Once it cooled take out from cooker or pan and serve.

Tip

.You can use vanilla essence instead of cardamom powder.




KAIPOLA








GHEE RICE

Ghee Rice

Ingredients

  • . Rice-1.5cup
  •  .Water-2.5 cup
  • .Bay leaf-1
  • .Green cardmoms-4
  • .Cloves-6
  • .2 inch cinnamon stick-1
  • .Lengthily sliced onion -1/2 portion
  •  .Ghee-3tbsp
  •  .Onion thinly sliced-1(for garnishing)
  • .Salt as needed
  • .Nuts and raisins-for garnishing
  • .Chopped coriander leaves-for garnishing



GHEE RICE

Method

STEP-1
.Soak rice for at least 20 minutes and drain it.

STEP-2.Heat a pressure cooker or a pan with ghee.
 Fry cashews till lightly golden, add raisins and stir up. Set them aside in a plate.

STEP-3
.To the same pan, add onions and fry till golden. These onions are used for garnishing and they add flavor to the rice.

STEP-4
.Add little more ghee and add bay leaf, 4 to 6 cloves, small cinnamon stick and cardamom. Fry for a min. Add sliced onion and fry till it become translucent.

STEP-5
.Add rice and fry on a medium flame for about 3 to 4 minutes, stir to prevent burning.
.Pour water and salt. Cook the rice till fully done.

STEP-6
.Garnish with raisins, cashews, fried onions and coriander leaves



 Tips

.You can serve ghee rice with chicken curry and yogurt.

APPLE POLA/APPLE KUMS

 Pola or Kums recipes are very famous in north Malabar region and there are so many varieties.

  • .Apples -2 (peel and cut into small pieces)
  • .Eggs -4
  • .Sugar -4tbsp
  • .Milk powder -4tbsp
  • .Flour -1tsp
  • .Baking soda -1 pinch
  • .Salt –a pinch
  • .Ghee -1tbsp


Method

STEP-1
.Blend all the above ingredients in the blender(except ghee).

STEP-2
.Heat a non stick pan, add ghee  and pour blended mixture. Cook on low flame till done.

STEP-3
.Garnish with cherries/nuts(optional).

EASY BANANA CAKE

  • .Roasted Nuts & Raisins –For Decoration (Optional)           


Method

STEP-1
.Grind banana,sugar,cardamom,egg and salt in a mixer. Make a paste.

STEP-2
.In a non-stick pan add ghee. Heat in low flame.

STEP-3
.Pour the mixture in to the non-stick pan.

STEP-4
.Cook in low flame until done.

STEP-5
.Decorate with nuts and raisins.

FISH MULAKITTATHU

Fish Mulakittathu


Kerala is one of the top procedures of the fish. Naturally fish plays a major role in malayalees food culture. Here is the recipe of a Kerala fish curry without coconut. In my recipe I used kashmiri red chilly powder. Because I love that red color in my curry. You can add red chilly powder instead of that.
Instead of kokum star (kodam puli) I recommend to use tamarind for better taste. And also use manchatti for the preparation of the curry.

  • .Coconut Oil                                                       -3tbsp
  • .Mustard seeds                                                    -1/4tsp
  • .Fenugreek seeds                                                - ¼ tsp
  • .Curry leaves                                                      - 1 string
  • .Lengthily chopped onion                                   -2(medium size)
  • .Lengthily Chopped tomato                               - 1
  • .Ginger garlic paste                                           -1 tbsp (each)
  • .shallots paste                                                    -2tbsp
  • .Sliced green chilly                                             -2
  • .Red chilly powder (kashmiri)                          -2tbsp
  • .Turmeric powder                                              -1/4tsp
  • .Tamarind water                                                 - 1 cup
  • .Fish                                                                     - ½ k
  • .Salt                                                                       -as required

Method

STEP-1
.In a manchatti pours coconut oil.

STEP-2
.Add mustard seeds and fenugreek seeds. When it begins to splutter add curry leaves and sauté.

STEP-3
.Then add ginger garlic paste and shallots paste. Sauté in low flame.

STEP-4
.Add sliced onion and sauté till it become translucent.Add green chilly mix well.

STEP-5
.Then add sliced tomato .Close the lid. And allow to cook in low flame till it become a fine paste.

STEP-6
.Add turmeric powder sauté it. Then add kashmiri red chilly powder. Sauté again.

STEP-7
.Add tamarind water. When it starts to boil add fish and enough water for the curry.
. Close the lid and allow to cook the fish in medium flame.

STEP-8
.Turn off the fire. Pour some coconut oil on the top of the curry

Tip
.If you don’t have tamarind ,use kukum star(kudam puli) as an alternative.
