CHATTI PATHIRI(SWEET)

Chatty pathiri(sweet)


Ingredients

For pancake
  • Flour-1 cup
  • Salt-a pinch
  • Egg -1


For the filling
  •  Small Eggs -5
  • Castor Sugar-10 tbsp(Can adjust according to your preferences) 
  • Raisins-3tbsp
  • Cashew nuts(broken)-3 tbsp
  • Poppy seeds(Couscous)-4tbsp
  • Cardamom powder-1tsp
  • Ghee-2tsp


For Coating:
  • small eggs-2
  • Sugar-5-6 tbsp
  • Cardamom powder- A pinch
  • Milk-1/2 cup


Method

For pancake

STEP-1
First let’s prepare the batter for thin pancakes.
 Mix flour, egg and a pinch of salt along with enough water for a smooth loose batter.
Mix it thoroughly without any lumps..

STEP-2
Heat a pan, grease it with butter/ ghee and start preparing thin pancakes. Cook both sides.
(Try to make this as the size of your pot or pan!! I used a sauce pan to get small chatti pathiri with 6 pan cake layers.)
Keep it aside.

For the filling

STEP-3
Beat the eggs lightly with sugar and cardamom.

STEP-4
Heat a large frying pan. Add ghee and saute raisins and cashew nuts until they start to change the colour slightly.

STEP-5
 Add the beaten egg along with cardamom powder and scramble the whole mixture until the egg is well cooked. Keep it aside.

For coating

STEP-6
Take milk in a bowl

STEP-7
 In a separate bowl add egg along with sugar and cardamom powder and stir well.

STEP-8
Take a sauce pan/ pot. Grease it fully with ghee/ butter.

STEP-9
Dip one pancake in milk first then dip in egg and place this in pan/pot.
Add egg filling on this and spread evenly.
Add poppy seeds.

STEP-10
On top of it, place one more pancake dipped in milk and egg.
Then add egg mixture spread nicely. Add poppy seeds.
Repeat till pancake finish.

STEP-11
Pour remaining egg over upper pancake then add poppy seeds.
Close the lid and keep 10 minute.

STEP-12
Flip over and cook the other side until it turn golden brown color.
