PRAWNS DRY FRY

Prawns Dry Fry



Ingredients


  • .Finely chopped shallots-10-15
  • .Curry leaves-2 string
  • .Coconut oil-2tbsp
For Marination

  • .Prawns-1/2 k
  • .Kashmiri red chilly powder-2tbsp(up to your spice level)
  • .Turmeric powder-1/4 tsp
  • .Salt –as required

Method

STEP 1
.Wash and clean the prawns.

STEP 2
. Strain the water.

STEP 3
. Marinate prawn and keep it aside for 15-30 minutes.

STEP 4
.Pour 2tbsp of oil into the pan. Fry prawns for few minutes till it becomes golden brown. Set aside.

STEP 5
. In that same oil sauté curry leaves and shallots. Sauté until shallots become translucent.

STEP 6
. Add prawn to this and mix well.Cook in medium flame for 5 minutes.

STEP 7
. Remove the lid and again fry for few more minutes.

STEP 8
. Once the prawns and the masala are mixed and fried well, remove from flame.

STEP 9
. Serve hot.

PRAWN DRY ROAST

Prawn Dry Roast



Ingredients

For marination
  • .Prawns-1/2 k
  • .Red chilly powder-1tsp(up to your spice level)
  • .Turmeric powder-1/4tsp
  • .Salt-as required
  • .Oil-for frying
For masala

  • .Chopped Onion-2 (small)
  • .Chopped Tomato-1
  • .Ginger garlic paste-1tbsp
  • .Green chilly-2(slit)
  • .Turmeric powder-a pinch
  • .Red chilly powder-1/4 tsp
  • .Curry leaves-1 string
  • .Salt-a pinch
  • .Chopped coriander leaves-few
  • .Lime juice-1 tsp

Method

STEP-1
Marinate prawns along with turmeric powder,red chilly powder and salt for 30 minutes.
Then fry in oil and set aside.

STEP-2
In that same oil sauté onion,till it become transclucent.

STEP-3
Add ginger garlic paste sauté again.

STEP-4
Add green chilly,sauté it

STEP-5
Add turmeric powder and red chilly powder,one by one ,sauté it.

STEP-6
Add tomato, close the lid and cook in low flame till the tomato became a fine paste.

STEP-7
Add enough salt for masala.

STEP-8
Add fried prawns and mix well. Close the lid and cook for 5 minutes in medium heat.

STEP-9
Then add curry leaves ,coriander leaves and lime juice.mix well and turn off fire.

NADAN FISH MULAKITTATHU

Nadan Fish(Sardine) Mulakittathu




Sardines (mathi) are best when you make curry out of it.. This is an easy fish curry and I got this recipe from my mom.Best when you make this in coconut oil and use Kashmiri chilly gives it a deep color.This curry is easy to make as we need not wait for the onion to turn brown.This is a quick and easy to make curry. You can make this curry with other fish like mackerel (ayila), sear fish, butter fish (modha) etc. But I recommend Sardines (mathi).

Ingredients
  • .Sardine (mathi)-1/2 kg
  • .Green Chilli-2(slit)
  • .Tomato- 1 big, chopped
  • .Kashmiri red chily powder-11/2tbsp(up to your spice level)
  • .Coriander powder-1tbsp
  • .Turmeric powder-1/4tsp
  • .Tamarind- 1 lime sized ball, (put in about 1 cup of water, mix and squeeze out to get the tamarind water)
  • .Salt-as required
  • .Coconut Oil-2tbsp
  • .Curry leaves-1 string
To Crush
  • Shallots-6-8
  • Garlic-4
  • Ginger-1 Piece
  • Fennel Seeds-1 Teaspoon




Method

STEP-1
Crush shallots,ginger,garlic and fennel seeds in a mixer or food processor.

STEP-2
.In a manchatty add  tomato,curry leaves,crushed mix, red chilly powder, turmeric powder, coriander powder  ,tamarind water and salt.

 STEP-3
.Allow to boil.

 STEP-4
.Add fish and enough water to it.

STEP-5
.Close the lid and cook the fish in medium flame.

 STEP-6
.Turn off fire and pour coconut oil and curry leaves.

Tip

.Simmering it longer will give a nice thick gravy.

For marination
  • .Kallummakkaya(Mussels)-1/2 k
  • .Red chilly powder -1tsp(up to your spice level)
  • .Turmeric powder-1/4tsp
  • .Salt – as required
  • .Oil-for frying(3tbsp)

For masala
  • .Lengthily chopped onion -1
  • .Lengthily chopped tomato -1
  • .Crushed ginger-1
  • .Crushed cloves-4 cloves
  • .Green chilly-2(slit)
  • .Turmeric powder-a pinch
  • .Red chilly powder-1/2 tsp(up to your spice level)
  • .Fennel seed powder-1/2 tsp
  • .Salt -a pinch
  • .Curry leaves-1 string
  • .Chopped coriander leaves-few
  • .Lime juice-1tbsp


Method

STEP-1
.Marinate the fish with red chilly powder,turmeric powder  and salt for 30 minutes.

STEP-2
.Pour oil into the pan.Then fry the marinated fish.Kept aside.

STEP-3
.Saute onion by same oil.

STEP-4
.Then add crushed ginger and garlic ,saute in low flame for 2 minutes.

STEP-5
.Then add turmeric powder.Saute again.



STEP-6
.Add red chilly powder,saute for 2 minutes in low flame.

STEP-7
.Then add fennel seed powder,mix well.
STEP-8
.Add tomato,then close the lid and saute in low flame until tomato become a fine paste(stirring occasionally.)

STEP-9
.Then add curry leaves and fried fish.Mix well.Close the lid and cook for 4-5 minutes.

STEP-10
.Finally add coriander leaves and lime juice.


STEP-11
.Mix well and turn off fire.

FISH MULAKITTATHU

Fish Mulakittathu


Kerala is one of the top procedures of the fish. Naturally fish plays a major role in malayalees food culture. Here is the recipe of a Kerala fish curry without coconut. In my recipe I used kashmiri red chilly powder. Because I love that red color in my curry. You can add red chilly powder instead of that.
Instead of kokum star (kodam puli) I recommend to use tamarind for better taste. And also use manchatti for the preparation of the curry.

Ingredients
  • .Coconut Oil                                                       -3tbsp
  • .Mustard seeds                                                    -1/4tsp
  • .Fenugreek seeds                                                - ¼ tsp
  • .Curry leaves                                                      - 1 string
  • .Lengthily chopped onion                                   -2(medium size)
  • .Lengthily Chopped tomato                               - 1
  • .Ginger garlic paste                                           -1 tbsp (each)
  • .shallots paste                                                    -2tbsp
  • .Sliced green chilly                                             -2
  • .Red chilly powder (kashmiri)                          -2tbsp
  • .Turmeric powder                                              -1/4tsp
  • .Tamarind water                                                 - 1 cup
  • .Fish                                                                     - ½ k
  • .Salt                                                                       -as required

Method

STEP-1
.In a manchatti pours coconut oil.

STEP-2
.Add mustard seeds and fenugreek seeds. When it begins to splutter add curry leaves and sauté.

STEP-3
.Then add ginger garlic paste and shallots paste. Sauté in low flame.

STEP-4
.Add sliced onion and sauté till it become translucent.Add green chilly mix well.

STEP-5
.Then add sliced tomato .Close the lid. And allow to cook in low flame till it become a fine paste.

STEP-6
.Add turmeric powder sauté it. Then add kashmiri red chilly powder. Sauté again.

STEP-7
.Add tamarind water. When it starts to boil add fish and enough water for the curry.
. Close the lid and allow to cook the fish in medium flame.

STEP-8
.Turn off the fire. Pour some coconut oil on the top of the curry

Tip
.If you don’t have tamarind ,use kukum star(kudam puli) as an alternative.
