KABSA RICE

Kabsa Rice






A staple across the homes of Arabia. Kabsa and majboos are similar  rice dishes popular  in the gulf countries especially Saudi Arabia.Kabsa is made differently in each household, some incorporating vegetables such as carrot.It may be made with lamb,beef or even fish. Often it is served with a home tomato sauce ‘Dakkous’ and garnished with pine nuts and almonds.Saudis like their kabsa with a hot sauce called ‘Shattah’.Enjoy!

Ingredients
  • Chicken With Skin-1(1 Chicken 4 Pieces)
  • Kabsa Rice—2 Cups                                                         
  • Water—3 Cups                                                                 
  • Olive Oil-3 Tablespoon   
  • Lengthily Chopped Onion-1 Large
  • Ginger Garlic Paste-1 Teaspoon (Each)                                        
  • Cloves-5-6                                                                 
  • Whole Black Pepper-10                                     
  • Cardamom -5-6                                                     
  • Cinnamon Sticks-3                                             
  • Bay Leaves-2-3                                                        
  • Tomato Puree-1                                                 
  • Salt--As Required                                                                       
  • Kabsa Powder-- 1 ½ Tablespoon                                                 



For Chicken Marinating
  • Butter-1 Tablespoon                                                                
  • Lime Juice-1/2 Teaspoon                                                          
  • Tomato Puree-1 Tablespoon                                                  
  • Kabsa Powder-1/2 Teaspoon                                                  
  • Salt- As Required                                                                       
  • Red Chilly Powder-1/2 Teaspoon                                         
  • Olive Oil-As Required                                                              




Method

STEP-1
Soak kabsa rice ½ hour .Wash and drain the rice.
In a pan roasts rice in olive oil. Set aside.

STEP-2
In a cooker/large bowl add olive oil saute onion till it become translucent. Then add ginger garlic paste saute again. Add whole spices (bay leaves, cinnamon, cardamom, whole black pepper and cloves), mix well. Add tomato puree, cook for few minutes. Add chicken pieces (skin side down) and fry for few minutes.

STEP-3
Add 3 cups of water, kabsa powder and salt. Allow the chicken to cook. Remove the chicken from stock.

STEP-4
Measure the chicken stock. If it is less than 3 cups, add water to it.
Add fried rice in to the chicken stock and cook .Cover it and let it cook on slowest heat, until water dries.

STEP-5
In a bowl, mix butter, lime juice, red chilly powder, kabsa powder, tomato puree and salt. Pour the mixture over the cooked chicken.

STEP-6
Spreading olive oil in a pan, grill the chicken both sides. (Oven method-Preheat oven at 350f. Place the chicken in oven 5-6 minutes. Then switch on the oven to grill mode and let it grill for another 5-6 minutes.)
