Coffee Cake
- All Purpose Flour / Maida -1 cup
- Sugar- 1/2 cup
- Oil- 1/3 cup Eggs - 2
- Coffee - 1 tablespoon
- Boiling water-2 tablespoon
- Baking powder-1/2 teaspoon
- Baking soda-1/2 teaspoon
- Salt-a pinch
For Icing:
- Whipping powder-2 packet
- Coffee-1 tsp
- Milk-150 ml
- Chocolate chips
- strawberry
Method:
STEP-1
Preheat the oven to 180°C(350°F).
STEP-2
Oil a round tin and sprinkle some flour in it and coat it
on all sides.
Mix coffee powder and boiling water and keep aside.
STEP-4
In a mixing bowl beat eggs till fluffy. Add in sugar and
beat till fluffy.
Add in oil and beat well. Pour in the coffee mixture and
mix well.
STEP-6
Sift in flour,baking powder,baking soda and salt in this.
STEP-7
Fold gently till everything is combined.
Pour this into a well oiled tin and bake it in the oven
for 25-35 minutes.
STEP-9
To make
the icing combine together all the frosting ingredients except the chocolate
chips and strawberry, mix together to combine. Add a dollop of whipped cream and cover the entire cake
with whipped cream.
Melt chocolate and drop the sides of the cake and draw
lines using tooth pick.
STEP-11
Place strawberries in center.
STEP-12
Slice and enjoy.
