BRINJAL FRY

Brinjal Fry/Upperi

Brinjal is one of the low calorie vegetables with good levels of antioxidants, iron, magnesium and many other nutrients.

Ingredients
  • .Cumin seeds-1/4tsp
  • .Peanut-2 hand full
  • .Ginger-1 big
  • .Garlic-7 cloves
  • .Oil-2tsp
  • .Onion-1/2 portion (finely chopped)
  • .Curry leaves-1 string
  • .Turmeric powder-1/4 tsp
  • .Red chilly powder-1tsp (depends on your spice level)
  • .Brinjal-1/2 k(cut into small pieces)
  • .Salt –as required

Method

STEP-1
.Grind peanut and cumin seeds in a mixer.

STEP-2
.Then add ginger and garlic to it. Crush again. Set aside.

STEP-3
.In a pan pours oil. Saute onion and curry leaves till onion become translucent.

STEP-4
.Add crushed paste to it. Saute very well.

STEP-5
.Add turmeric powder and red chilly powder one by one and sauté again ,to avoid that raw smell.

STEP-6
.Add brinjal and salt ,mix well.
.Close the lid and cook in low flame by stirring occasionally.
