Deviled Eggs topped with
Tomato Sauce and Coriander Leaves
Deviled eggs or deviled eggs are hard-boiled eggs, shelled, cut in half, and filled with the hard-boiled egg's yolk mixed with other ingredients such as mayonnaise and mustard, but many other variants exist internationally.

Ingredients
- Hard Boiled Eggs - 4
- Mayonnaise – 2-3 tablespoon
- Spring Onion (chopped into tiny pieces) – 1
- Pepper powder-1/2tsp
- Chopped coriander and mint leaves-few
- Chilli Sauce - 1tsp
- Onion powder (optional) -1/4 tsp
For garnishing
- Tomato sauce
- Coriander leaves
Method
STEP-1
Place eggs in a large
saucepan. Cover them with cool water. Heat the pan on high heat and bring the water to a full rolling boil. Adding a teaspoon of vinegar to the
water may help keep egg whites from running out if an egg does crack while cooking. Also some people find
adding 1/2 teaspoon of salt to the water helps prevent cracking as well as
making the eggs easier to peel.
STEP-2
Slice the Eggs in half lengthwise carefully so as not to
break the Egg white sockets. Chilling the eggs makes it easier to cut precisely.
STEP-3
Remove the yolks & put them into a bowl & mash them
well. Keep the whites aside.
STEP-4
Mix all the above ingredients (mayonnaise, pepper powder, onion
powder, chilly sauce, chopped mint leaves and chopped coriander leaves) into
the mashed yolks. I usually take only 2or 3 yolks for health reasons. Check for
seasoning & adjust.
